The real limit to sound quality is typically the microphone.
You can use a digital recorder, but with a good microphone
you can do as well with a PC as well. If you listen to my podcasts,
those are recorded using a Plantronics USB headset and Audacity,
a freeware audio editor.
With all the current interest in podcasting, you can probably find
a lot of alternatives with a google search for "podcasting hardware".
Obviously you can ignore the podcasting specific parts, but you'll
find a lot of emphasis on how to record and microphones.
