DEP doesn't really affect performance in the sense that it doesn't
slow anything down. (I'm guessing "performance options" was kind of
a "we have to put this somewhere" and it sounded good :-).
I wouldn't exclude anything until or unless you discover that you
need to. The problem is that malware can masquerade as other things,
and the more you exclude the more your open the door to malware.
