Very little.

If I'm guessing correctly, the signature is 'changing' based on
the format of the email you are replying to. Plain text email gets
a plain text signature, while an HTML response gets something based
on the HTML contained in the message.

I have generally the same problem. My approach has been to simply
define my signatures in plain text (since that's how I do most
of my email) and let the HTML versions fall where they may. You
can see below that my sig has specific spacing when viewed in
plain text, but in HTML it's quite different. I just live with it.
